Meals in a muffin are a wonderful way to prepare and store a meal, particularly for a small breed dog. The muffins can also be frozen for storage.
1 cup yogurt
1 cup chopped-up turkey breast
lunch meat
3 medium-sized bananas (very ripe)
2 teaspoons baking powder
4 cups unbleached flour
2⁄3 cup olive oil
2 teaspoons cinnamon
1⁄2 teaspoon powdered sage (optional)
1 cup chicken broth
4 eggs with shells beaten
3 medium-sized apples, peeled and grated
1. Place the yogurt, bananas, chicken broth, olive oil, and whole eggs in a blender—blend until smooth
2. Combine unbleached flour, baking powder, sage and cinnamon
3. Mix the liquid ingredients with the flour mixture
4. Add in the turkey breast and grated apples
Bake at 350 degrees for 30 minutes, or until the top is brown (when a toothpick is inserted in the center and it comes out clean).
Makes 18 medium-sized muffins.
